The Best and Easiest Chicken Noodle Soup
Soup season is almost here! Who loves soups and who doesn’t??
Cameron is not a fan of soup unless it is this homemade Chicken Noodle, and I love soup except for any kind of chicken noodle besides this one lol. This is a super easy soup with amazing flavor that only takes a couple hours to cook!
Ingredients for soup
2 pks CJW Chicken Legs
2 Med onions
1 whole garlic (4-5 cloves)
2 med carrots
1 celery stick.
Water
Instructions for soup
Dice the onions, garlic, carrots, and celery and add it to a large pot.
Next add the legs (they can still be frozen) and enough water to cover it all.
Turn on the heat to med-high until it starts to boil then lower the heat to allow to simmer.
Leave it and come back in a bit to start the noodles.
Once the meat falls off the bones that’s when you know it is done.
Separate the meat from the skins and bones and add the meat back to the pot.
Finally, add your noodle and cook to desired texture of the noodles.
Ingredients for the noodles
1.5 Cup all-purpose flour
2 eggs
1 TB olive oil
1 tsp salt
1/2c active sourdough starter OR 2-3 TB water
Instructions for the noodles
Put the flour in a bowl or on a wooden cutting board and make a well in the center.
Add the eggs, oil, starter (or water), and salt to the well.
Take a fork and whisk all the liquid together in the well.
Slowly add the flour until it is all mixed in.
Knead it until all the flour is incorporated and the dough becomes smooth and elastic (about 7-10 min)
Allow the dough to rest covered for 30min-2 hrs on the counter or overnight for better gluten breakdown.
Divide the dough into 2 to roll out.
Use as much flour as you need to keep the dough from sticking when you roll out.
Use a knife and cut into whatever size you like.
Add to the broth and cook to desired texture.
Depending on who you talk to and whose research you have seen, cooking bones for just long enough to get the meat to fall off and extract nutrients maybe better for you if you have histamine issues. Some people say that the longer you cook bones the more nutrients you extract from them. I think it all comes down to what makes you feel better and how much time do you have.
I like being able to make this Chicken Noodle soup in only a couple hours and not have to worry about being around all day to cook it. I also like the legs because of the tendons that have nutrients in them, and they have so much flavor its crazy!
