Quick, Easy, Nutrious, Delicious Breakfast Burrito!
It feels like to me that breakfast burritos get a bad rep and people think they are not as healthy as a bowl of plain oatmeal.
I am here to change that! This is not your typical drive through breakfast burrito, it is packed full of good nurtition to fuel your body and keep you going!
Breakfast Burritos
Ingredients
1/4 Pound of Mild or Hot Sausage
5 Pasture Raised Eggs (preferably from a farmer you know)
1 small onion diced
1 garlic clove minced
3 small sweet peppers
1 cup raw spinach
Tortillas
Avocados
Instructions

Cut up the garlic, onions and peppers and add them to a hot cast iron skillet with a little bacon grease to get it started. Cook for about 2 min until onions and peppers get soft.

Add the sausage and brown for 1-2 min breaking it up into small bits with spatula.

Add the eggs to a bowl and scramble then add to the pan. A trick I use for cooking eggs in cast iron is to pre scramble them and then not move them around in the pan very much until they are mostly cooked.

Cut the spinach up a little and add to the pan, they take 30 seconds or so and 1 cup might look like a lot to start, but they cook down a ton.

Cook or warm your tortillas and slice your avocados.

Add the eggs to your tortilla and a couple slices of avocados and enjoy!
